Asian Style Spinach Salad

This dressing combines all my favorite Asian flavors. Add cooked chicken or shrimp for a complete full flavored but low calorie meal.
- 1 pound fresh spinach (1 large bunch) washed and stems removed
- 1 large clove garlic, finely minced
- 1 T minced fresh ginger
- 1/4 cup chopped scallions
- 1/3 cup chopped fresh cilantro
- 2 T rice vinegar
- 2 T fresh lime juice
- 2 T soy sauce
- 1 tsp sugar
- 1/8 tsp red chile flakes
- 1 tsp toasted sesame oil
- 1/3 cup peanut oil
- 2 T freshly chopped mint leaves
- 1/3 cup chopped peanuts
